Or in glass jars with herbs and some other vegetables as Italian sauce, or Sweet-Sour sauce.
Peel and cleen the tomatoes, remove the seeds and cut the 'meat' up in dice (rough chop). Chop the onion very finely. Cut the garlic up.
Heat the olive oil in a wide saucepan. Add the onion and garlic. Fry them for two or three minutes, till they glaze.
Add the tomato, basil, vinegar and sugar and let it cook slowly for about 30 minutes. Add salt and pepper to taste.
Push it trough a siff (or use a blender) to get a smooth homogenous sauce.
You can use it instantly or store it in jars or in the freezer.
